Paprika red is a carotenoid pigment extracted from ripe red pepper. The original description divides the carotenoids into a more polar red fraction, listed as 50–60% of the total, and a less polar yellow fraction containing carotene and a yellow carotenoid described in the source as “corn yellow”.
